Gluten-Free Sugar Cookie Truffles

As some people may know, I have Lupus, which is an autoimmune disease. An autoimmune disease occurs when the body’s immune systen attacks the healthy cells. The body is fighting itself. It has been shown that gluten affects my body in a negative way due to my Lupus. Due to gluten affecting my body, I have been gluten free for around three years now. I have learned how to make many gluten free foods.

Many people assume that because something is gluten free, the food isn’t good. This recipe will definitely change your mind. This is how you make gluten free sugar cookie truffles. For the cookie mixture, you will need 2 ¾ cups gluten free all-purpose flour, 1 ½ cup granulated sugar, 1 tsp baking soda, ½ tsp baking powder, 1 cup butter, 1 egg, and 1 tsp vanilla extract. For the frosting, you will need ¼ cup plain cream cheese, 2 cups white chocolate chips, and sprinkles if you wish. Once you have all your ingredients ready to go, preheat your oven to 350 degrees. 

You will then begin to mix all of the ingredients for the cookie mixture in a big bowl. After it is mixed, roll the mixture into balls and place them on a baking sheet. Pop them in the oven for about 10 minutes, but make sure to watch them. When the cookies are done, crumble them and put them in a bowl. Put your cream cheese in with your crumbs and start to form cookie balls. Melt your white chocolate chips in a bowl. You will then dip your cookie balls into the melted chocolate and place them onto a sheet. Add sprinkles if you would like and let the chocolate harden.
